Full rack (6 ribs) of New Zealand Lamb Spare Ribs, vacuum sealed. This is a cut that is often overlooked and relatively unknown, but we love it for it's richness, texture and point of difference. Smoked for 6 hours over feijoa wood and glazed with The Good Food Society special BBQ sauce to finish. Ideally paired with a simple green salad with a tangy vinaigrette.
Best served hot. To serve, bring a pot of water to the boil and place vacuum bag in the pot. Turn down to a medium heat and simmer for 10 minutes.
Will keep for 7-10 days refrigerated or can be frozen. Will last 3-4 months in the freezer.
