This week we are teaming up with Awatoru Wild Food Provedores to bring you wild New Zealand Venison shanks. These have a raw weight of 800-900 grams each, so will comfortably feed 3-4 people.
We will be taking these generous shanks and classically seasoning them with salt and pepper, before hanging them to smoke for a few hours over feijoa wood. The shanks will be braised to finish off, served in a vacuum sealed bag with some of the braising liquor.
Best served hot. To serve, bring a pot of water to the boil and place vacuum bag in the pot. Turn down to a medium heat and simmer for 12 minutes.
Will keep for 7-10 days refrigerated or can be frozen. Will last 3-4 months in the freezer.
